Ingredients:


Sweet chutney:

  • 2 tablespoon cup tamarind pulp.
  • 1/4 cup sugar syrup.
  • 1/2 cup water.

 

Red chili-Garlic chutney:

  • 10 red chilies soaked in water.
  • 6-8 garlic cloves.
  • 3 tablespoon water.
  • Salt as per taste.

 

Dabeli mix:

  • 2 dry red chili.
  • 1 cup Mashed potatoes.
  • 1 teaspoon coriander seeds.
  • 1/2 teaspoon cumin seeds.
  • 1/2 inch stick cinnamon.
  • 1 tablespoon oil.
  • 2 to 3 cloves.
  • A pinch asafetida.
  • Water as needed.

 

Garnish:

  • 5 tablespoon coriander leaves.
  • 5 tablespoon pomegranate seeds.
  • 5 tablespoon dried coconut shavings.
  • 3 tablespoon tutti frutti.

 

Masala peanuts:

  • 1/4 cup Roasted peanuts.
  • 1/2 teaspoon dabeli masala.
  • 1/2 teaspoon oil.
  • 1/2 teaspoon sugar.
  • Pinch of salt.

Assembly:

  • 6 Pav.
  • 1/2 cup onion.
  • 2 tablespoon butter.
  • 1/4 cup Sev

Method:


Debeli Mix:

  1. Put some oil in a medium frying pan
  2. Include coriander seeds, cumin seeds, dry red chilies, cinnamon sticks, cloves and roast till aromatic.
  3. When it’s roasted, add asafetida cook it for few seconds and then turn off the flame.
  4. Transfer the baked masala into another container and allow it cool down to room temperature.
  5. After 10-12 minutes grind these seasonings carefully.

 

Chili-Garlic Chutney:

  1. First Take the soaked red chilies, garlic and salt and also grind it to a smooth paste.
  2. Include some water into it to make a thick paste.
  3. Once grinded, move the paste to a bowl (you can add some more water if it’s too thicken).

 

Sweet Chutney:

  1. Take frying pan and boil some water in it for 2-3 minutes.
  2. Include sugar, tamarind pulp and also leave it cook for 3-5 minutes.
  3. When cooked, allow it to cool to room temperature level.

 

Mashed Potatoes Mix:

  1. In the pan warmth some oil as well as add in the Dabeli Seasoning Mixture and mix on a medium flame.
  2. Include boiled mashed potatoes as well as mix it well.
  3. Add salt as pas taste and after that add water.
  4. Leave it to cook for 2-3 minutes on medium flame.
  5. When cooked move it on a plate and flatten it.
  6. Garnish with tutti frutti, coconut shavings, coriander leaves as well as pomegranate seeds.

 

Masala Peanuts:

  1. Take Roasted Potatoes and add some oil, Dabeli Seasoning in it and Mix as well as sugar and mix it well.
  2. Include salt as per taste.

 

Assembly:

Cut the Bun-Paav so you can stuff it with prepared mixture of potatoes and chutney on it.

Then stuff with sweet chutney, chilli-garlic chutney, mashed potatoes mix, onions and also masala peanuts.

Take a frying pan and roast the Dabeli with butter till become crispy on both the sides.
